Ingredients
4 Eggs
1/2 lb Bacon
4 English Muffins
Butter
Milk
Hollandaise Sauce
Directions
Grease an 8x8 pan with butter. Cook bacon and crumble half on the bottom of the dish. Break apart 4 English Muffins and add on top of bacon.
In a medium bowl, combine 4 eggs and a large splash of milk. Once thoroughly combined, add egg mixture to the dish covering all areas evenly.
Add remaining bacon to the top.
Let sit over night. We recommend at least 4 hours. (We made ours like 36 hours ahead of time and it lasted great)
When ready to eat, use a camp stove or a grate over hot coals and cook covered for about 30 minutes. NOTE: Pay close attention to your heat, you may need to add more or less accordingly.
While breakfast bake cooks, make hollandaise sauce on stove. (We use the McCormick packet so all that is needed is milk and a little bit of butter). Spread hollandaise on top of bake and cook an additional 3-5 minutes uncovered.

This breakfast is perfect for camping because it allows you to make it ahead of time without needing to bring a lot of ingredients along with you. You can customize this as you wish, for example subbing bacon for Canadian bacon or ham, or adding peppers and onions. My favorite thing about this is that it doesn’t require a lot of work in the morning. There is nothing like waking up and immediately having to slave over the stove. This recipe allows your to sit back and enjoy your coffee and have a relaxing morning.
