BBQ Chicken Pineapple Pizza

Ingredients
1/2 Red Onion - Diced
1 cup of Canned Pineapple
1 TBSP Red Wine Vinegar
1 TBSP Sugar
1 Chicken Breast
1/2 Cup BBQ Sauce
2 Pizza Crusts (we used Boboli Original Pizza Crust)
Mozzarella Cheese
Cilantro (optional)
Directions
Start by heating a large drizzle of oil in a pan over medium heat and saute onions until soft.
Once onions are cooked, turn heat up to medium high and drain pineapples (RESERVING THE JUICE) and add to pan cooking until pineapples are slightly brown. This should only take a minute or two
Once pineapples are browned, reduce heat and add red wine vinegar, sugar, and half of reserved pineapple juice. Let simmer until thick and has a “jammy” consistency. Remove from pan and set aside for later
Dice chicken and add to a pan with a large drizzle of oil over medium heat. Once chicken is cooked through, add 1/4 cup BBQ sauce and remaining pineapple juice. Simmer until thickened.
Once chicken is done, coat both sides of the pizza crusts with olive oil. Split remaining 1/4 cup of BBQ sauce between the two and top with the onion & pineapple jam, chicken, mozzarella, and cilantro. Place on a heated pan (preferable iron skillet) and cover until cheese has melted and bottom is slightly browned.
Notes:
I am all about simplicity. While I love a delicious meal while out in the wilderness, I prefer to have it as simple as possible for assembly and clean up. A few things I found helpful were:
Cook the chicken head of time! I hate cooking with raw meats when out camping. We have soap and water and we always wash out dishes well but I still worry about cross contamination regardless. So to avoid that at all costs, I cook our chicken ahead of time! This also helps cut down on dishes because a knife and cutting board aren’t required since I diced them at home.
Cut all your vegetables ahead of time! If you have read any of our other recipes you will know I am a broken record about this. It just makes life SO.MUCH.EASIER. Less clean up, less dishes, and less time spent cutting!
Portion out your ingredients! If you are someone who likes to follow a recipe to the T and use exact measurements, make those measurements ahead of time! This will save you so much time at camp, and will also help cut down on the amount you bring. If you know you only need 1 chicken breast for dinner and not the whole pack of 4, you will save so much room in your fridge / cooler.
