Green Chili Roll-ups
Ingredients
2 Chicken Breasts
1/3 Cup Cream Cheese
1 1/2 Cup Green Chili Salsa
5 Tortillas
1/2 Yellow Onion
Queso Fresco
Olive oil
Salt and Pepper
Bake ware / Tools
Stove top
Rubber Spatula

Directions
Prepared Ahead of Time (optional - if you would like to make it all at camp its totally doable, i just prefer to make everything as easy as possible once out there):
Heat a drizzle of oil in a small pot. Dice 1/2 of a yellow onion and add to the pot and cook on medium low until softened to desire.
Season chicken breasts with salt and pepper and cook thoroughly. I prefer to cook mine in the oven at 350 degrees for about 30 to 35 minutes until chicken hits internal temperature of 165 degrees.
Once onions are cooked to desire, add 1/3 cup cream cheese and 1/4 cup green chili salsa until melted and combined.
Once chicken is cooked, cut into small cubes and add to cream cheese mixture. Chill until ready to cook.
Prepared at Camp:
Cover bottom of foil pan with 1/4 cup green chili salsa.
Divide chicken mixture evenly between tortillas and roll them up and place in pan. Cover with remaining green chili salsa and top with queso fresco.
Cook for 15 minutes or until heated through.
